Cheesecake-Filled Pumpkin Cupcakes

Ever since the I got back from vacation a week ago I can’t stop thinking about pumpkin. Maybe it’s the cooler weather or the leaves changing red, yellow and orange. It could also be the fact that Starbucks is now serving their delicious Pumpkin Spice Latte that has made me obsessed with making anything and everything pumpkin.

Since I have featured 2 of my absolute favourite pumpkin recipes with you already – Pumpkin Scones and Claudia’s Pumpkin Pie – I had to find a new recipe that me and Claudia enjoyed enough to share. Enter Silvana Nardone from Every Day with Rachel Ray and her Cheesecake-Filled Pumpkin Cupcakes. Because there is cream cheese baked inside, these are probably one of the richest cupcakes I’ve ever tasted. And they are absolutely, positively delicious! If you want a substitute for pumpkin pie or pumpkin cheesecake this Thanksgiving, these babies are by far your best bet. Your family and friends will love you for it.

Pumpkin Pie

With Canadian Thanksgiving coming up this weekend, we decided it was a perfect opportunity to share Claudia’s special pumpkin pie recipe.

Now, there is a furious debate in our household on whether or not pumpkin pie should be eaten warmed up with vanilla ice cream or with whip cream. Now, when I say in our “household” I mean it’s a debate between my immediate family (i.e. my brother, Claudia, my Dad and me)  against the newcomers – my boyfriend and my brother’s girlfriend. My family feels that anything other than vanilla ice cream on pumpkin pie is simply absurd. The newcomers (and apparently everybody poled on our Facebook fan page) think otherwise. I still stand by my ice cream opinion.

Pumpkin Scones

I realize that the spicy and savory taste of pumpkin is typically reserved for autumn when the weather becomes slightly cooler and you need something warm to pick you up – not when it’s +40 celsius with the humidity in August. As I mentioned in my last post, this is week two of Claudia being on vacation. This recipe is her most favourite that I bake and she requests it often. These scones are dense and almost exactly like the pumpkin scones you will find at your neighbourhood Starbucks. I was given this recipe from a friend of mine a few years ago. I’m actually not entirely sure where she found it, so I apologize if I’m not giving the proper recipe credits. In other words, please don’t sue me if this is your recipe. I’m just trying to be a good daughter, after all.

Strawberries & Cream White Chocolate Scones

A word of advice, my friends: don’t ever schedule two workout sessions in one day after a weekend of consuming beer and rich food for your birthday. It won’t end well. At least that is what I have discovered today when I made my triumphant return to the gym this morning with a 1 hour weight class. I was so dehydrated, I got dizzy and thought “And I have to do this all over again at 6:30pm? No way!”. Even my lovely trainer who was teaching the class commented that I looked “off”. It was then and there that I regretted all my terrible (yet oh so delicious) food choices of the past weekend. Burgers, ice cream, chocolate and beer. I swore them off then and there. It wasn’t worth feeling so horrible while working out. But, after 2 hours of recovery and a nice relaxing bath, I am back to my old self and craving these decadent scones.

Besides our Pumpkin Scones, these are by far the best scones I have ever made. They are so soft and buttery. The strawberry glaze gives it a fruity sweetness. Not to mention the melted white chocolate and strawberries inside the scone – so amazing. The dough comes together really easy in a food processor and is very easy to roll out with your hands.  A no-kneed dough is my kind of dough, people.

This recipe makes 6 very large scones, but you can also make smaller, mini scones as well. Just depends on how big of a cutter you have, or how big you want to cut the dough triangles. I highly recommend you give these a try soon! I know I will. Totally worth struggling in the gym for.

Slow Cooker Turkey Chilli

Claudia's Cookbook - Slow Cooker Turkey Chilli 3 (1) copy I am in desperate need of some summer weather. We had the worst winter in over 100 years here in Winnipeg. I wish that was an exaggeration. It’s actual fact. Now that we finally have some above freezing temperatures, we have yet to be anywhere close to average for this time of year. The trees are still bare and gardens remain empty. We have seen more rain than sunshine in the last couple weeks and I am starting to think I should move to the West Coast and at least have the ocean if I have to put up with all this rain.

Because of the cooler weather, I am still in the comfort food zone. I am still trying to eat relatively healthy, which is proving to be challenging with the lack of spare time I seem to have between my ice hockey and ball hockey schedules. That is why I really love this recipe. It makes a ton of delicious, healthy chilli, and I can easily bring it to work for lunch or have it a few nights in a row as leftovers when I’m shuttling between work and hockey.

The flavours are very complex and rich. There is a hint of sweetness from the cinnamon and cocoa powder. It also has a bit of heat with the jalapeños and cayenne spice.  I love adding beer to my chilli recipes, but you don’t have to if you aren’t a fan of the flavour. I used a nice Pumpkin Ale in this recipe, but you can use any light or amber ale. To be honest, you can’t really taste it that much in this recipe since there are so many spices. However, feel free to substitute chicken or vegetable stock if you choose. Also, because you can do this recipe in a slow cooker, it’s insanely simple. If you don’t have 6 hours, you can easily make this on the stove in a large pot. You just need to brown the turkey with the onions and garlic, then simmer with the rest of the ingredients on medium low for about an hour. Super versatile and delicious.

Happy Canadian Thanksgiving

Turkey

If you were following our posts on our Facebook page last night you would already know that we are celebrating Thanksgiving here in Canada this weekend. Our family dinner was actually yesterday and I’m still full from all the delicious food that Claudia made. I mean, look at that turkey above! I’m excited for my lunches over the next few days which will consist of all the delicious leftovers.

Cabbage Rolls

It would not be Thanksgiving in our house without Cabbage Rolls. Claudia decided to make an entire roaster full! When I asked her why she made an entire roaster full when she was only cooking for 6 people, she replied “Well, why not?!”. I love my mother! Gravy

While Claudia and I were preparing dinner, I learned yet another valuable food lesson. She always uses potato water mixed in with the turkey drippings to make her gravy. It gives it a little added flavour rather than using just regular water. Brilliant, right? It blew my mind anyways.

Pumpkin Pie

We finished off the evening with the Claudia’s delicious Pumpkin Pie, and the standard family debate: whether pumpkin pie should be served with whipped cream or vanilla ice cream. I take ice cream every single time. There is nothing better in my opinion.

Saskatoon Pie

Claudia's Cookbook - Saskatoon Pie 21I am finally starting to feel a little better. As I mentioned in my last post, I have been struggling with a nasty head cold. This past weekend, I was to the point where I couldn’t take being in the house any longer. So, I went on a bit of a baking/cooking tangent. I now have enough blog material for a month! Yeah, I’m not Type-A at all.

Claudia and I finally reunited in the kitchen. It was a glorious moment, filled with her making passive aggressive self-talk comments while rolling out the Saskatoon Pie dough (i.e: “way to go Claud, that wasn’t the right size at all!”) to her comments towards me on walking into her home looking all “professional photographer” because I brought my tripod. Yep, it was a good ol’ mother-daughter time indeed! I actually had a lot of fun…and an eye-opening experience as to where I get my own negative self-talk from – ha!

So, this pie is simply amazing. I actually took it to my friend Nicole’s for dinner the evening after we baked it and both her and her sons loved it. You can’t get a more honest review than from children under the age of 10. The Saskatoon Berries are sweet with a hint of tartness, and the crust is flaky and delightful. With Saskatoon’s in season, you cannot go wrong with this pie. If you don’t have access to Saskatoon Berries, you can easily use blueberries.

Our Most Popular Recipes of 2012

2012 was a fantastic year. I can’t believe it’s almost over! I wanted to take an opportunity to thank you all again for visiting our blog – whether it was for the first time or your tenth time.

Today, I wanted to recap our top 12 recipes for 2012. I always find it fascinating to see which recipes resonate the most with our readers. In our 3 years of blogging, our most popular recipes always tend to be the Ukrainian dishes. Our all-time most popular recipe is Cabbage Rolls, which was one of my very first posts on the blog. Without further adieu – here is your top 12 of 2012!

Fiery Roasted Garlic Tomato Soup 17

#12 – Fiery Roasted Tomato and Garlic Soup – Without a doubt, this is my favourite soup of all-time. It’s creamy, rich and packed with a lot of delicious flavour.

#11 – Pumpkin Snickerdoodles with Vanilla Icing – These were a pretty big hit with my friends. These cookies are soft, warm and sweet. Besides, who doesn’t like hints of cinnamon, ginger and pumpkin…especially in the autumn season.

#10 – Salted Caramel Chocolates – This creation was the end result of me getting really into using chocolate molds. Not to mention, I love salted caramel. These treats are really easy to make and super delicious. There is nothing better than homemade chocolates in my humble opinion.

#9 – Wookiee Cookies – My love of Star Wars resulted in my love for these cookies. The recipe is from the Star Wars cookbook that I received for a birthday present. These cookies start out as your basic chocolate chip cookies until you add cinnamon to them. They are delicious, and my fiancé’s favourite cookies!

#8 – Danish Apple Bake – This apple dish is buttery, flaky and full of flavour. I still love my former coworker for this recipe!

#7 – Rolo Brownie Trifles – This individual trifle recipe is decadent and rich – a perfect guilty pleasure treat. You simply can’t go wrong with Rolo candies, brownie, gooey salted caramel, and chocolate whipped cream!

#6 – Pyrizkhy (Ukrainian Cabbage Buns) – As I mentioned earlier, Ukrainian recipes tend to be the most popular on my site. I posted this recipe a week ago and it made the Top 12 of 2012! These turned out to be a big hit for our Ukrainian Christmas Eve dinner this year.

#5 – Chocolate Dipped Cream Cheese Butter Cookies – These cookies are a nice twist on the traditional holiday butter/sugar cookie. The cream cheese makes the cookie a little denser and the chocolate adds a nice sweetness. These were another big hit this year at Christmas time.

#4 – Cadbury Mini Egg Cookies – These cookies are an all-time favourite amongst my friends. Since you can now purchase Mini Eggs year round, I try to only make these beauties around Easter, to not overdo it of course. I often get requests from my friends to make them during the non-Easter season and I cannot help but oblige. These are truly delicious!

#3 – Pumpkin Caramel Dream Cake – An adaption to our very popular Skor Cake, this Pumpkin Caramel Dream Cake is rich and full of caramel and pumpkin flavor. Perfect for the autumn season…or any season!

#2 – Egg Nog Cupcakes – Perfect for the holiday season, these cupcakes are sweet, dense and moist. I am not a huge egg nog fan, but these cupcakes have the perfect amount of egg nog flavour.

IMG_6209#1 – Imperial (or Empire) Cookies – I was so happy to see that this recipe was #1 in 2012. I love these cookies. They remind me of my days as a Starbucks Barista. They are soft, delicate and delicious. I choose to make them with Claudia’s Raspberry Jam recipe, but you can always use your own favourite.

Cranberry Peanut Butter Granola Clusters

Since we have been featuring a lot decadent desserts lately, our goal over the next few weeks is to post more healthy recipes. After all, we only have 3 more months until official bathing suit season!

The challenge of featuring healthy food alternatives is that we still want them to be flavourful. I always look to the experts in healthy, delicious recipes – Janet and Greta Podleski of “Looneyspoons” and “Eat, Shrink and Be Merry” fame. I love their cookbooks. If you recall, we featured their Peanut BETTER Gingersnap Cookies on our blog not too long ago! This recipe was adapted from their Looneyspoons Collection cookbook recipe. These pumpkin-flavoured granola clusters are simple, packed with deliciousness and perfect as a healthy treat.
