Salted Caramel Chocolates

There is a ton of chocolate in stores this time of year. With Valentine’s Day recently over and Easter right around the corner, I can’t help but be inspired by the massive amounts of chocolate treats everywhere. I was craving salty caramel this past week and tried to find some great recipes that brought together the deliciousness of chocolate, salt and caramel. To my surprise, there wasn’t a great deal out there. Therefore, I decided to combine a couple recipes I found to create this envisioned beauty. This recipe was adapted by NY Times food author Jill Santopietro and the food blog Adventures Made from Scratch. It is simple and perfect for your chocolate cravings. Not to mention, these treats taste a million times better than any store bought candy out there.

Baked Brie

It’s not everyday that somebody shows up at my door with a big wheel of cheese. Well, last week Claudia did. And she was proud. She had been wanting to make this appetizer since before Christmas. When she showed up at my door that cold Monday evening, her patience had clearly run out. She couldn’t take looking at the wheel of Brie cheese in her fridge anymore. The thought of it expiring before she had an opportunity to feature this recipe on this blog was too much for her to take. Therefore, she showed up and we made this beauty. It’s rich, buttery, cheesy, sweet and sour all at the same time. Did I mention Claudia also brought a Costco-sized box of crackers to go along with the wheel of cheese? She meant business. I couldn’t say no – and I’m glad I didn’t. This appetizer is absolutely delicious and perfect for any company you may be hosting. You can also cut this recipe in half if you don’t want to purchase a huge wheel of Brie cheese and make enough to feed a small army. But then that wouldn’t be as fun! Finally, a special thank you to Claudia’s coworker, Barb, who gave us this recipe. None of this could have been shared without her.

Edamame-berry Salad

Yesterday Claudia showed up at my house with, what looked like, 17 recycle bags full of food. She wanted to cook. She wanted to cook BAD. After a few hours and painful cramps in my feet, we were able to crank out a few great recipes for the blog! This salad is a newer addition to Claudia’s rotation. She was very eager to share it with you all. Not only is it super pretty, but it’s super healthy, fresh and delicious.

Pineapple Slice

I love fruit desserts. Apple, strawberry, raspberry – you name it.

But pineapple? I was a little skeptical.

As you can tell, this recipe is old. It apparently was my Grandmother’s. The image above reaffirms why I needed to create this blog, as this is Claudia’s recipe. Handwritten, worn and slightly yellow. Splash some water on this puppy and it’s a goner.

My Grandmother apparently made this dessert a lot more than Claudia did while I was growing up. Prior to this blog posting, I argued with Claudia that I never tried this tasty dessert before. She vehemently disagreed. When we received a request to make this treat for Christmas, it was then that I fell in love with this delightful slice. Try it and you will too!

Pardon our interruption…

If you tried to view our site over the past few days and found some random hosting site rather than your favourite Claudia’s Cookbook recipe – you’re not alone. We decided to switch up our website hosting company and it landed us M.I.A for a few days. I would like to apologize if this has caused you confusion and deep sadness that we were gone forever. This whole process forced me to do a bit of a redesign. Have no fear – our website is back and better than ever. I hope you enjoy the new look and feel of the site!

As a peace offering, I leave you with a great cookie recipe I have been meaning to try for ages – Baker’s One Bowl White Chocolate-Chocolate Chunk Cookies (pictured above). Roasted Veggies

First off, Happy New Year! How many resolutions have you broken already?! Ah, don’t be ashamed. Like most people, I also tend to break them within the first few days. That’s why I do my best not to make them anymore.

I figured I would post one of my all-time favourite recipes that will help you keep your healthy living resolutions for 2012. This is probably one of the simplest, most delicious vegetable dishes I have tried. It is adapted from the Looneyspoons Collection cookbook by Janet and Greta Podleski. These ladies are amazing at creating delicious dishes that are super healthy and simple. I highly recommend you pick up one of their cookbooks and give some of the recipes a try. You won’t be disappointed. These roasted vegetables are flavourful, hearty and totally diet compliant.

Sugar Cookies

The holidays would not be complete without making and decorating Sugar Cookies. As you can tell from the image above, I decorate cookies like a 5 year old. Actually, a 5 year old could probably do a lot better. I still draw stick figures for people. I didn’t do very well in art class.

Claudia received this recipe from a coworker (Stacey) a few years ago. It’s very simple and makes great tasting cookies. We prefer thicker, chewier Sugar Cookies. But you can easily roll this dough out to make thinner, crispier cookies.

Melt-In-Your-Mouth Shortbread Cookies

I can always tell when the holidays are upon us. My evenings become jam-packed and I spend my Sunday’s in the kitchen with Claudia. I’m talking 6 hours this past Sunday! It was pretty fun. My feet were killing me by the end of it though. I honestly don’t know how Claudia can stand in the kitchen for hours on end making dozens upon dozens of perogies at a time. She’s Superwoman. Somebody buy her a cape!

Last Christmas we ended up featuring a lot of the holiday baking items I enjoyed growing up. Today’s blog is no exception. These cookies are my Dad’s favourite – and for very good reason. They literally melt in your mouth. Literally. This is no joke people. They are the softest, most delicate shortbread cookie I have ever tried. And they are delicious and super, super simple to make.
