Your favourite cookie, but in bar form. That is basically what this recipe is all about. During Christmas, we featured Claudia’s fantastic Sugar Cookie recipe. Chewy, moist sugar cookies are one of my all-time favourite kind of dessert. When I came across this Sugar Cookie Bar recipe, I knew immediately that I needed to try it. I also received a request by a friend to make these, as she also though the recipe and concept sounded amazing. I’m glad I did. This recipe is adapted by the blog The Curvy Carrot. It is super simple and delicious. Make these once and I am confident you will continue to get requests to make them again and again.

You will need:

For the cookie bars:
1 cup unsalted butter, at room temperature
2 cups granulated sugar
4 large eggs
2 tsp vanilla
5 cups flour
1 tsp Fleur de Sel or coarse sea salt
1/2 tsp baking soda

For the frosting:
1 cup unsalted butter, at room temperature
1 tsp vanilla
1 pinch Fleur de Sel or coarse sea salt
4 cups confectioners’ sugar
5 tbsp milk
Food coloring, as desired
Sprinkles, for garnish (optional)

In the bowl of your standing mixer fitted with the paddle attachment, cream the butter and sugar on medium-high speed until light and fluffy, about 2 minutes.

Reduce the mixer speed to medium and add the eggs, one at a time, mixing well after each addition.

Next, add your vanilla.

In a separate bowl, sift together the flour, salt, and baking soda.

Reduce the mixer speed to low, and slowly add the flour mixture to the butter mixture.

Mix until thoroughly combined.

Evenly spread the cookie dough onto a greased 15″ x 10″ baking pan.

Bake in a 375 degree fahrenheit oven for about 15 minutes, or until a tester inserted into the center comes out clean.

They should be light golden brown.

Cool completely.

Now for the frosting!

In the bowl of your standing mixer fitted with the paddle attachment, beat the butter until light and fluffy, about 2 minutes.

Add vanilla.

Then, add your pinch of salt.

Reduce the mixer speed to low and carefully add the confectioners’ sugar, one cup at a time.

Add the milk and mix until smooth.

Add your desired amount of food color (if using) and mix until incorporated.

Frost and decorate as desired onto the cookie bars.

Slice into squares and serve.

Sweet, moist and delicious.

    I am SOOOO making these tomorrow! YUM. Sugar cookies are my favourite, but of course they totally SUCK to make, roll, cut, bake, decorate. So excited to try this recipe – Thanks!
