My Baba is well known for 3 of her culinary endeavours in our household. #1 – Perogies. #2 – Spaghetti and meatballs. I have no idea where a Ukrainian woman learned how to cook Italian food, but it was amazing. #3 – This Bavarian Cheesecake recipe. It is to die for. I remember every summer when Claudia, my Dad, my brother and I came back from our 3-week stints in Saskatchewan, Baba would have a big batch of spaghetti and meatballs and this dessert to welcome us home. It was so comforting and definitely worth sharing. Apples, cinnamon, cream cheese, crunchy walnuts and my own optional addition – caramel sauce. How can you possibly go wrong with this rich delight? You will win friends, boyfriends, girlfriends, and probably even world wars with this dessert. Trust me, it’s a winner.

Mix together vanilla, butter and sugar in a small bowl

Beat until creamy and blended

Blend in flour. Dough will be crumbly.

Spread on bottom and up sides of a 9-inch springform pan.

Press down nicely.

Next mix cream cheese sugar together. Add vanilla and egg.

Mix well.

Spread evenly over crust.

I’m terrible at the “spread evenly part”. I needed Claudia’s assistance with this.

How sad, hey?

If you haven’t already, slice your apples.

Mix apples with sugar and cinnamon.

Delicious!

Spoon over cream cheese. Sprinkle with walnuts.

Bake in a 375 degree fahrenheit oven for 45-55 minutes.

Cool on rack for 10 minutes.

Remove sides of springform pan and allow to cool completely.

Crunchy and soft at the same time.

Sweet cinnamon and cream cheese mixed with tart apples.

For the crust
  1. 1/2 cup butter

For the filling
  1. 1 - 8oz package cream cheese

  4. 1/2 tsp vanilla
For the topping
  1. 2 cups apples
  2. 1/4 cup sugar
  3. 1 tsp cinnamon
  4. 1/4 cup walnuts
Instructions

    Just tried Baba’s Bavarian Cheesecake Recipe. It’s to die for. Jim absolutely loved it, it’s at the top of my list now for favourite deserts! Instead of the walnuts I used crushed peanuts instead and topped it with ice-cream and caramel sauce mmmmmmmmmmmmmmm……..Thanks Claudia for sharing!!
