We are just waking up from our holiday food comas. We hope that the holiday season is being kind to you all! We did a fair amount of baking leading up to Christmas, therefore the next few posts will be of the dessert variety. We honestly couldn’t wait to share this new recipe of ours with you.

This recipe is actually not a Claudia original. I actually found it on the blog by the wonderful and talented Bakerella. We tried it for the first time last week and everyone who has tried these little darlings has fallen in love. So of course, we simply had to share the love with you as well!  I think these little babies would be a fun addition to any New Years Eve potluck party. The only downside to this story is that you need Red Velvet cake mix. I haven’t been able to locate this in Canada, so I typically stock up on this when I hit Target in the USA. I highly recommend you give the Duncan Hines variety a try.

You will need:

1 box of Duncan Hines Red Velvet cake mix, along with 3 eggs, 1/3 cup vegetable oil and 1-1/4 cups water as per box instructions.

3/4 tub of cream cheese frosting

1 lb chocolate wafers (we used Belgian milk chocolate waffers but you can use your favourite chocolate – even white chocolate will work nicely)


Mix cake powder and ingredients as per box instructions.

Place in a 13 x 9 inch cake pan and bake as per box instructions.

Cool cake completely then crumble into a bowl.

It’s fun and a lot easier to just use your hands.

Mix cream cheese in with cake thoroughly.

Again, it’s a lot simpler to just use your hands.

Your cake and frosting should be adhering together nicely and look like the above image.

Roll into quarter-sized balls and place on a wax paper lined baking sheet.

Place in freezer for 15 minutes.

Melt chocolate wafers in the microwave and melt.

Place chilled cake ball in chocolate and cover completely.

Once the baking sheet is filled place in fridge to chill completely.

If you have any leftover melted chocolate, you can get decorative and splash over chilled cake ball for some added texture.

Very rich and super yummy!

    I just made these and they’re delicious. I added a 1/2 marachino cherry to the middle which turned out nicely.
