Blueberry Lemon Cheesecake Cookies

Blueberries are everywhere right now. As I mentioned in my post a few weeks ago, I know it’s summer when blueberries are in abundance in the stores and are cheap! I’ve been trying to keep up with the supply in my house before they spoil. That’s how these cookies came about. I wanted to bake something different from the typical blueberry muffins, coffee cake and bars. I was so happy when I found this recipe from the blog Hot Polka Dot. These cookies are moist, rich and soft. Not to mention, the juicy burst of blueberry make them absolutely delicious.

Wookiee Cookies

I love Star Wars. Some people may say it borders on infatuation. Therefore, when I learned that this past weekend was the 35th anniversary of the first Star Wars movie (Episode IV), I thought what better recipe to feature than Wookiee Cookies.

I grew up on Star Wars. Some of my fondest childhood memories revolve around me and my brother spending our summer vacations watching our VHS tapes of the 3 movies which my parents taped off of TV. One of my earliest memories is actually of when my parents took me to the theatre see Return of the Jedi – where I was too embarrassed to tell Claudia that I was scared of the lightsaber battle happening between Luke and Darth Vadar (see, I’m quite the Star Wars nerd), that I instead insisted she take me to the bathroom. I didn’t have to go. I was like 4 years old, don’t hold it against me!

Even today, when I see Star Wars playing on television, I have to watch. I have all the movies on DVD, but I still have this need to stop what I’m doing and watch. It was this action that made my boyfriend purchase the Star Wars cookbook for me for my birthday a few years ago. It was then where I discovered these delicious treats. Wookiee Cookies encompass all the comfort and deliciousness of chocolate chip cookies but with a hint of cinnamon. The cinnamon really does make these cookies amazing.

As previously mentioned, this recipe is adapted from The Star Wars Cookbook: Wookiee Cookies and Other Galactic Recipes by Robin Davis.

Cadbury Mini Egg Cookies

I loved Easter as a kid. My parents put on the best Easter egg hunts. My brother and I would go nuts every Easter morning filling our plastic baskets with treats. It was like a second Christmas to us. Who wouldn’t enjoy waking up and finding chocolate and candy treats all over the house? I’m not ashamed to admit that even now as an adult, Claudia still takes the time to buy us kids little treats for Easter. I can’t speak for my brother, but the big chocolate bunny and the Easter-themed novelty socks are my personal favs!

I do not know a single person who doesn’t get excited when they go to the grocery store and see that Cadbury Creme Eggs and Mini Eggs are back on the shelves. It was around this time last year when I decided to do a little experiment. What would the Best Chocolate Chip Cookies in the world taste like with Cadbury Mini Eggs? Well my friends, they taste absolutely delicious! So delicious in fact, that I have decided to post them on the blog. Don’t worry, Claudia has totally approved. And so has all my friends who have tasted them.

Pardon our interruption…

If you tried to view our site over the past few days and found some random hosting site rather than your favourite Claudia’s Cookbook recipe – you’re not alone. We decided to switch up our website hosting company and it landed us M.I.A for a few days. I would like to apologize if this has caused you confusion and deep sadness that we were gone forever. This whole process forced me to do a bit of a redesign. Have no fear – our website is back and better than ever. I hope you enjoy the new look and feel of the site!

One thing I should mention is if you subscribed to our blog before and didn’t receive an update regarding this latest post, you may need to re-subscribe to it again due to this whole redesigned platform. The new subscription link is on the right side of the blog. Again, I appreciate your patience and your interest in the blog!

As a peace offering, I leave you with a great cookie recipe I have been meaning to try for ages – Baker’s One Bowl White Chocolate-Chocolate Chunk Cookies (pictured above). I can’t begin to explain how delicious these cookies are. It made me wish I made them a lot sooner. Super rich and chocolately – perfect for those winter chocolate cravings. Enjoy!

Pumpkin Creme Pies

I love baking. As you can tell, I post more dessert recipes on this blog than mains, soups and side dishes. Part of it is that I’m a better baker than I am chef. The other part is that they are just so darn pretty.

I have been on a huge pumpkin kick this past month. Since Claudia’s famous pumpkin pie has already been featured, that leaves me to find other pumpkin-related desserts that can compete.  I think I found a serious contender. This recipe was adapted from a recipe posted by The Deutsch Girl on the Tasty Kitchen website. These sandwich cookies are super simple to make and absolutely delicious. The perfect mix of warm spices and sweet cream cheese. They also freeze extremely well, which is good if you can’t manage to finish all 24 cookies this recipe makes!

Peanut BETTER Gingersnap Cookies

This recipe is not a Claudia original. But these cookies are so delicious we had to share them immediately. One of my coworkers made these a few weeks ago and was nice enough to share one with me. After one bite I knew I had found cookie love. This recipe is from the Food Network Canada show Eat, Shrink and Be Merry. Not only are these cookies absolutely delicious with it’s creamy, gooey peanut butter texture and sweet gingersnap flavour, they’re also not that bad for you! In moderation of course. If you ate all 20 of these babies, you would probably need to do a little run on the treadmill…for 3 hours. Still…totally worth the 3 hour sweat.
